tequila + cake = amazing

of all the things jimmy buffett has brought to my life, the tequila cake recipe definitely ranks in the top 10. in a search for a "cheeseburger in paradise" cookie recipe, I stumbled upon the margarita cake. this cake has become a concert staple, a favorite in the office, and overall the best thing i can bake. since this cake has brought so much fun to my baking repertoire, i figured it was time to share.

Preheat oven to 350 degrees. Prep a Bundt pan (i like the Pan spray for baking)

In a large mixing bowl, combine the following

4 eggs
1/2 cup vegetable oil
2/3 cup water
1/4 cup lemon juice
1 teaspoon orange extract or 1 tablespoon orange zest
2 shots tequila
1 shot triple sec
1 box white cake mix (like Sandra Lee says, take help from the store when you can)
1 packed vanilla pudding mix

i like to hand mix this cake. slowly blend ingredients, then mix more vigorously for about 2 minutes. you want minimal lumps, almost completely smooth batter.

pour into pan, place in center of oven rack (you want your rack in the center of the oven as well) bake for about 45-50 minutes. i have a gas oven, it usually takes exactly 45 minutes to bake. cake is ready when you can put a toothpick in the center of the bundt and pull it out clean.

allow cake to cool and then remove from pan.

to make the glaze:

1 cup confectioners sugar
2 shots lime juice
2 shots triple sec
1 shot tequila

mix in small bowl until all ingredients are combined. pour slowly over cake. i like to pour a quarter of the glaze over the cake, let it soak, and then repeat until all the glaze has been utilized.
